PB+J Oatmeal

A quick and easy breakfast can make all the difference in starting your day off on the right foot, but when that breakfast also tastes delicious and is good for you…that, my friends, is a winning combination. This oatmeal is loaded with healthy fiber, whole grains, vitamins, and antioxidants. It’s perfect for all of us kids at heart, who could enjoy an old-fashioned PB+J sandwich at virtually any time of day. But it’s also a good compromise for when we’re trying to be real adults, who take good care of themselves. Serve this up with a side of eggs, and you’ll be well-fed and well-fueled no matter what the day throws at you. 

PB+J Oatmeal
Serves 1

2/3 cup water or unsweetened almond milk (adjust liquid depending on package instructions)
1/2 cup raspberries
1 ½ tsp chia seeds
1 packet unsweetened instant oatmeal
1/2 to 1 tsp ground cinnamon
1 TB unsweetened almond butter
3 strawberries, halved or sliced

In a small saucepan, bring water or milk to a gentle boil. In a small bowl, mash raspberries and chia seeds together with a fork. Set aside.

In a small bowl, combine oatmeal with cinnamon. Pour boiled liquid over oats and stir until thickened. Add almond butter and stir to combine. Add raspberry jam, stirring again. Taste and adjust seasoning if necessary. You may want to add a pinch of salt or sweeten it slightly. If so, use just a bit of pure maple syrup or honey. Otherwise, the fruit should provide enough sweetness.

Garnish with fresh strawberries and enjoy warm!
