Southwestern Sweet Potato Hash Brown Waffles

These waffles are a brunch-lover’s dream. They’re sweet, savory, and full of fiber, nutrients, and healthy fats. The flaxseed and eggs in the recipe act as a binder, so no flour is required, which is definitely worth noting for anyone who eats a gluten-free diet. After tasting this version, I started thinking of other ways to season these already-delicious waffles.

A few ideas:
•    Seasoned with sage and nutmeg, topped with crumbled sausage and sautéed apples. 
•    Seasoned with curry or garam masala, topped with herbed yogurt, raisins, and pine nuts. 
•    Seasoned with cinnamon-sugar, topped with maple syrup, pecans, and salted butter. 

Southwestern Sweet Potato Hash Brown Waffles
Serves 2-4 (depending on how hungry you are)

4 cups peeled and grated sweet potato
1 small onion peeled, grated into a dish towel, and squeezed dry
1/4 cup chopped chives
1 tsp garlic powder
½ tsp cumin
½ tsp smoked sweet paprika
½ tsp Trader Joe's Chili Lime Seasoning Blend
1 TB Trader Joe's Everything but the Bagel Sesame Seasoning Blend
20 grinds of black pepper
½ tsp kosher salt
2 extra large eggs, beaten
1 tbsp olive oil, plus more for greasing the waffle iron
1 TB ground flaxseed

Preheat waffle iron. 

Combine sweet potatoes, onions, chives, and all spices in a large bowl and mix well. Add beaten eggs, olive oil, and ground flaxseed. Stir until thoroughly combined. Divide potato mixture into four even portions—each portion should be about one cup. 

Grease the waffle iron very liberally, and pour one cup of potato mixture into the center of the waffle iron. You want to sort of pile the potatoes into the middle. They will not reach the edge of the waffle iron, and that is okay. If you try to spread the mixture to the edge, the waffles will be too thin and will not hold together. Close the waffle iron, giving it a quick but firm press, and cook for 6 minutes. Cooking time may vary depending on your waffle iron. 

Carefully remove the waffle with two forks, transfer it to a serving plate, and garnish with your choice of toppings. I went for avocado, fresh salsa, and a little sour cream. Repeat the process, until all four waffles are made, being sure to thoroughly grease the waffle iron between each waffle. I forgot to grease it before I made the last waffle and it totally fell apart. Don’t say I didn’t warn you!
