If you don’t like avocados or guacamole, this post is not for you. I’m sorry. If you fall into the category of all other guacamole-lovers and will risk everything in life just to get that guac, you’re welcome! Besides, I couldn’t let Cinco de Mayo happen without posting this recipe, and yes, I know that Cinco de Mayo is just a fake holiday/excuse to drink way too much tequila. That being said, if you do drink too much tequila, just grab a bowl of this guacamole and a party-sized bag of tortilla chips, and you’ll be good to go!
2 avocados, diced
1 jalapeño, seeded and minced (leave the seeds in if you like it extra hot!)
1 glove garlic, grated
1-2 handfuls grape tomatoes, cut into quarters
1 lime, juiced (start with half and add more to taste)
1 small handful cilantro, chopped
Kosher salt, to taste
Mash all ingredients together with a fork. Pour into a bowl and serve with your favorite chips. I love sweet potato tortilla chips or plantain chips!
